Week in a day

Today I have been cooking up some foods to get us through the week, along with some leftovers to freeze.



This is Fannie Farmer 1946 cookbook Mac & cheese. Yummy! It's almost all gone now, the kids ate most of it for dinner.




This is chicken breast tossed with a cilantro lime pesto. For tacos or even on saffron rice. Should freeze well too!




This is pork loin I ground myself and browned up with onion, garlic, garlic and black bean sauce and a little sesame oil. I added some cilantro at the end. I plan to serve this in romaine lettuce leaves.

Temecula Wine Adventure

I wanted to post my pics on this blog, I think I got most of the pics of the food, although I did not get a pic of the dinner we had at the place we were staying at. It was really good, we both had steaks Jen's came with borsin mashed potatoes, mine came with shrimp and bernaise saucce, I think we were to buys devouring it to remember to take pictures.

Pork Loin

Had some pork loin in the freezer. Had some left over spinach and mushrooms so I decided to stuff the pork loin with both. It was pretty good except while trussing up the loin after stuffing the mixture started to fall out, and even more fell out while trying to brown the thing in the pot. The recipe I was adopting said to cook the whole thing on the stove top, but Jen wisely suggested to throw it in the oven. It came out juicy and tender. I made a balsamic reduction for a glaze at the end. I did not get any pics of the final dish arranged but here is the spoon with the glaze (it got thick!) and the left over loin.
